What should I make with my chocolate truffles?
I have this delecious block of chocolate truffle in the fridge…and lately I have been just enjoying eating peices from it…now I am thinking of making something with it…any ideas? Try to be more creative than just Chocolate Cake or brownies.
125g butter, chopped, at room temperature
2/3 cup caster sugar
1 tsp vanilla essence
1 1/4 cups self-raising flour, sifted
1 tbs milk
1 cup choc bits
200g good-quality Dark Chocolate, broken into squares
1 tbs hundreds & thousands
Method
Preheat oven to 180°C. Line two large flat baking trays with non-stick paper.
Using an electric mixer, cream the butter, sugar and vanilla essence in a mixing bowl until creamy. Add the flour and mix on low speed until just combined. Add milk and mix until dough comes together. Stir in choc bits and mix well.
Using 1 tbs of mixture, drop the dough onto baking trays allowing room for spreading. Bake for 14-16 minutes, swapping trays after 10 minutes or until light golden. Stand for 5 minutes on tray before transferring to a wire rack to cool completely.
Place the chocolate into a small microwave-safe, heat-resistant bowl. Microwave, uncovered, for 3 minutes on medium, stirring every minute with a metal spoon until melted and smooth.
Spread the top of each biscuit with the chocolate, place onto a wire rack, sprinkle with hundreds & thousands and allow to set.
1 large ripe banana, peeled and mashed
2 teaspoons vanilla extract
2 eggs, lightly beaten
1 cup milk
1 cup caster sugar
2 1/2 cups plain flour
2 teaspoons baking powder
1 cup dessicated coconut
250g milk chocolate, broken into pieces
100g spreadable cream cheese, to serve
Method
Preheat oven to 200°C. Grease and flour a 19cm x 9cm x 6cm loaf pan. Mix together the mashed banana, vanilla, eggs and milk. Stir in the sugar. Sift the flour and baking powder over the wet ingredients. Add the coconut and gently fold through the mixture, using a large metal spoon.
Fold in the chocolate, being careful not to over-mix. Spoon into the prepared loaf pan and bake for 1 hour and 15 minutes, or until a skewer inserted in the centre comes out clean. Allow to cool in the pan for 10 minutes, then turn onto a wire rack to cool. Serve sliced with cream cheese.
I know you wanted to be more creative than plain chocolate cake so I found this one:
700g pkt chocolate mud cake mix
Chocolate & raspberry swirl cake mix
6 eggs
2/3 cup vegetable oil
3 tbs margarine or soft butter
1 1/2 tbs milk
150g raspberries, to decorate
Method
Line 2 x 20cm round cake pans with non-stick baking paper. Prepare the Cakes according to packet instructions. Set aside to cool completely.
Use a serrated knife to carefully cut the tops off the cakes to flatten. Cut the cakes in half horizontally.
Prepare the mud cake icing according to packet instructions. Set aside for 10 minutes to thicken.
Meanwhile, prepare the White Chocolate frosting according to packet instructions.
Place the base of the mud cake on a serving plate. Spread 1/3 of the mud cake icing over the cake. Place a layer of White Chocolate Cake on top. Spread 1/2 of the remaining mud cake icing over the cake. Top with the remaining layer of mud cake. Spread the remaining mud cake icing over the cake. Top with the remaining white chocolate cake. Spread the white chocolate frosting over the top of the cake. Scatter with the raspberries to serve.
