Wedding foods for summer?

we’re entertaining the thought of having a bbq buffet for our june 28th wedding. we already have decided on the following foods, what else should we add? we’re aiming for a light, summery feel. we’re getting married in a boathouse on the river and i would like to keep it informal and fun.

You should definitely serve cole slaw. I used to live in the South and it is a tradition to put cole slaw on the sandwich with the BBQ…very yummy. One of the most popular BBQ places in my area also served these great huge sweet onion rings with their BBQ – they were about the diameter of the roll and an inch thick..sooooo good.

We have also given the kids PB&J for a large family party. We got those Uncrustables. You can get a large, bulk box at Costco or BJ’s. They’re cute and it will be one less thing you’ll have to make. For a killer mac & cheese recipe, use Pattie LaBelle’s “Over the Rainbow” M&C..it is too die for. I made it for a family party years ago and now they won’t let me bring anything else. If you want to do a signature drink, I would suggest Sangria. Many restaurants were offering it this summer and I got hooked. Very affordable drink to make and a good summer beverage. Use cheap red wine, rum and triple sec, mix with sugar and fruit juices. You can serve over Sprite or Ginger Ale to make it go farther or for those who like it less potent. If you decide to do the BBQ yourself, it is really easy. I did it for my son’s birthday party. Buy pork loin in bulk at a place like Costco, cook in crock pots. The meat comes out so tender you just shred it with a fork and add your favorite BBQ sauce. Check All Recipes if you want to make a homemade sauce.

If you do decide to go with chips and salsa as someone suggested, you could do a peach or mango salsa for a summery twist. We did a BBQ-themed party for my Grandmother’s 80th and my mom made the prettiest large centerpiece for the food table. She got a large picnic basket, put in a checkered tablecloth kind of spilling out. Leaned down a bottle of wine, loaf of italian bread and had bunches of grapes spilling out…very pretty! For eating tables, we bought bunches of mixed flowers at Costco (gotta love that place!), pult the flowers in mason jars with checkered ribbons around the neck. Easy and affordable. My mom makes a signature peanut butter and chocolate cake too by the way…your groom has good taste!
